Reading the Label: Premier Choix, Per 100 Grams

Per 100 grams, our premier-choix duck foie gras declares 560 kcal, 58 g of fat of which 26 g are saturates, 1.9 g of carbohydrate, 7.2 g of protein and 0.07 g of salt. Nothing in that line is incidental: foie gras is, by definition, a product of richness, and an honest label states it plainly.

The near-absence of salt is worth a second look. A raw, premier-choix liver arrives in the kitchen unseasoned — seasoning belongs to the chef, not the packer. That is why our chef notes for the terrine specify 12 g of salt and 3 g of pepper per kilogram, added by the person who will answer for the final plate.

The label also carries the marks of control: EAN 3161453740497, customs heading 0207 45 93 00, health agreement FR 85 109 001 CE. Read together with the Mehadrin certification, the label is the shortest summary of the house we can print.
