Ritual slaughter takes place at Euralis Gastronomy in Lescar, France, a facility approved by French veterinary authorities.

The process operates under Regulation (EC) No. 1099/2009 and Article R.214-70 of the French Rural and Maritime Fishing Code, which recognise ritual slaughter as a lawful and protected practice in France.

No stunning

The process excludes any electrical, mechanical or gaseous stunning before slaughter, aligning with kosher requirements while meeting strict hygiene, food-safety and animal-health standards.

Full traceability

Each production batch is fully traceable from slaughter through processing and distribution — tracking animals from farm to slaughter, monitoring processing, and documenting packaging and distribution.

What is in the Maison Michaël range?

The range is built around the duck: premier-choix foie gras (about 0.5 kg average), ready-to-serve duck pâté, magret (280–480 g) and confit legs (250–350 g) — one supervised supply chain composing a complete kosher service.

How should the foie gras be served?

En terrine: defrost 24 h, devein, season 12 g salt and 3 g pepper per kilo, cook in a bain-marie at 90 °C for about 50 minutes, then rest. En escalope: slice 2 cm, sear 2–3 minutes per side over low heat, and season at the end.
